67 products have made the leap to the exhibition space of the Anuga taste Innovation Show
From 9th to 13th October 2021, the international food and beverage industry will meet again for Anuga in Cologne. The world’s largest trade fair for the food industry is also setting new standards digitally and will also bring from 11th to 13th October experts from all over the world together on the new digital platform Anuga @home. Under the guiding theme “Transform”, more than 4,600 exhibitors from 97 countries will present a variety of products in 10 trade fairs over the next five days. Of particular interest are new trends and international product innovations.
In this context, the Anuga taste Innovation Show plays a central role as a trend barometer and initiator for the global food business. Selected by a jury of international specialist journalists and market research analysts, the most important news of Anuga are presented to trade visitors and media representatives here. A total of 418 companies with more than 1,332 ideas have applied for inclusion in the special show. The jury selected 67 products and concepts from this that convinced in terms of idea, innovation, sustainability and creative implementation – across the various trade fairs of Anuga. In addition, ten products were distinguished as particularly innovative.

This year’s new products show one thing above all else: sustainability, health and convenience shape the innovations of Anuga 2021. Plant-based food is an ongoing topic. The trend towards vegetable protein has recorded a major breakthrough in 2020. Various food and beverage manufacturers try to integrate purely plant-based ingredients either as a program supplement or as a main component into their product development. Consumers have become more sensitive to the topic of sustainability, so that plant proteins are also becoming more and more popular with them. Foods enjoy additional popularity with the product promise “purely plant-based”. Vegetable protein sources include Soy, peas, pumpkin seeds and sunflowers. The novelties include, for example, wholemeal crispbread from chickpeas, protein balls, plant-based fish salad, a vegetable sauce made from fava beans or beetroot wraps.
A second trend focus is on alternative meat proteins. Meat substitutes are one of the food trends of the future – and these are no longer just vegetable burgers or vegetarian meat substitute products. The new alternatives range from laboratory meat or cell-based meat to insects. Because on the part of consumers, the desire for meatless nutrition and alternative products is increasing. The new products of Anuga range from ready meals with vegetable minced meat balls to plant-based chicken nuggets or sausages. Cell-based meat, for example, will be presented at the New Food Conference on 10/11 at Anuga.
The third trend focus of this year’s Anuga includes products with health-oriented added value and natural ingredients without artificial colors. This is where products with clean labels come into play. Clean Labelling provides the end user with information about ingredients, origin, ethical factors and ecological factors. Exhibitors show here, for example, Turkish coffee with collagen, which counteracts the classic effects of coffee such as narrowing of vessels and wrinkles. Products with Kombucha are also very trendy: The variety ranges from lemonades, teas to kombucha shots that contribute to healthy intestinal flora.
The topic of sustainability is also still topical. Products such as compostable coffee capsules, lemonade obtained from unusable sour grapes and paper-based cups score points here.
Unusual presentations and flavors can also be found in the beverage as well as in the frozen food sector. Examples are blue-colored spirulina as an energy booster for athletes or purple fries.
Current trends and future solution scenarios also play a role at Anuga in other special shows and topics. These include Dairy Alternatives, Meet more Meatless or Clean Label. This year’s congress program also provides insights into the change in nutrition. The New Food Conference discusses the opportunities of cell-based meat, the Newtrition X Innovation Summit discusses solutions for personalized nutrition and the ZNU Congress discusses holistic approaches to sustainability.
