Together with Europe’s largest hunting fair starts from 07. – 12. June 2022 the WILD FOOD FESTIVAL. On the occasion of the 40th JAGD & HUND anniversary, all visitors can even visit the culinary food event – as well as numerous other actions on the outdoor area of Messe Dortmund – free of charge and thus also the stage program with TV and star chefs such as Johann Lafer. The native Styrian is already part of the party for the second time and once again has a few tasty recipes in his luggage. In conversation with the WILD FOOD FESTIVAL team of Messe Dortmund, he revealed what visitors can look forward to at the festival, how he has experienced the corona pandemic so far and what he is planning next. On Facebook and Instagram, the star chef will also have exciting insights about himself in the next few weeks as well as preparation tips for the perfect game dish.
Johann Lafer looks back on more than 40 years of unique culinary career, in which he learned from great chefs such as Eckart Witzigmann and Jörg and Dieter Müller. In numerous successful TV series, books, magazines and in his restaurant on the Stromburg, the popular star chef Johann Lafer has been proving for years that he is a master of his trade. What the Styrian-born touches becomes a culinary feast. All visitors can also convince themselves of this at the WILD FOOD FESTIVALS at Messe Dortmund in June, because on the 8th In June, Lafer chats from the sewing box and presents a culinary delight of venison art on stage (12:30 – 13:30) and in an exclusive workshop (14:30 – 16:00).
But before that, he answers the questions of the WILD FOOD FESTIVAL in an interview.
Interview with star and star chef Johann Lafer
WFF: Finally it starts again. Events such as the WILD FOOD FESTIVAL can take place again and visitors can get tips and inspiration for great dishes and products live on site from experts like you. We can’t wait either, but it was a long way to get there. How have you actually experienced the last few years and the pandemic as a whole?
Johann Lafer: It was a time that was characterized by very mixed feelings and situations of different kinds. However, when it comes to cuisine, I had the feeling that people, due to the time spent at home, were very concerned with food, its content and its creation. I had the impression that this perception has increased the appreciation for better, more varied and, above all, more sustainable food among certain target groups.
WFF: Well, the visitors of the WILD FOOD FESTIVAL are in the right place (smiles) with us. Mr. Lafer, the audience can now see you for the second time at the festival. What kind of feeling is it to finally be there live again? And what makes the WILD FOOD FESTIVAL so special from your point of view?
Johann Lafer: Through my last visit, I remember a lot of moments that trigger a real longing for the festival that is finally taking place again. Very good audience, people who are mainly interested in game meat and good food.
WFF: On your last visit, however, you were also able to inspire many visitors with tasty preparation tips for venison. How was it with you? When did you have your first experiences? Have you always been a fan of venison preparation or rather skeptical at first? And what is special about venison for you?
Johann Lafer: As a little boy from a farm in Eastern Styria, surrounded by huge forests, I noticed very early on that good game meat, grown up in an intact nature, is something very special and natural. Unfortunately, there are too many people who very often still cannot enjoy the great benefits of venison due to difficult shopping. At the fair, they have the opportunity to learn everything about the origin and can talk directly to the right contact persons. However, I will also once again motivate visitors to make a certain effort to enjoy this.
WFF: Can you chat a little out of the box about what awaits visitors to your stage show this year? And what can you learn in your workshops?
Johann Lafer: This year I will prepare the favorite product of the Germans, namely the schnitzel from the venison leg, in different variations. And in the workshop, people will learn what a delicacy a corn ram back under the hazelnut crust can be. Apart from that, I came up with refined side dishes that go perfectly with game.
WFF: Mikhail Gorbachev, Jacques Chirac, Helmut Kohl, Bill Clinton and Boris Becker: They have already conjured up menus for the very big ones, have been awarded a star in the Michelin Guide and look back on numerous successful TV shows – an incredible vita: What are you particularly proud of? And what else is on your bucket list or what have you always wanted to achieve?
Johann Lafer: If you have indeed tried to make many people happy with your actions in the kitchen for 45 years, then you should first be satisfied with what you have achieved. True to the motto: “who rests, rusts”, I will try to teach people that food is a means of life and the basis of our being. Life is far too short to eat badly!
